  • 1 cup water
  • 1 cup freshly squeezed lemon juice (from about 6 lemons)
  • 4 cups water

Instructions

  1. Make the Simple Syrup: In a small saucepan, combine the sugar and 1 cup of water. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool.
  2. Combine Ingredients: In a blender, combine the cooled simple syrup, lemon juice, and 4 cups of water.
  3. Blend: Blend until smooth.
  4. Freeze: Pour the mixture into a freezer-safe container (like a loaf pan). Freeze for at least 2-3 hours, or until solid.
  5. Scrape and Blend: Once frozen, use a fork to scrape the frozen mixture into icy shards. Transfer the shards back to the blender and blend until you achieve a slushy consistency. You may need to blend in batches depending on your blender size.
  6. Serve: Pour the slushie into glasses. Garnish with lemon slices, if desired, and serve immediately.

Notes

  • For a sweeter slushie, add more sugar to the simple syrup.
  • For a less tart slushie, add a bit more water.
  • You can also add other fruits, like strawberries or raspberries, to the blender for different flavor variations.
  • If you don’t have fresh lemons, you can use bottled lemon juice, but the flavor won’t be quite as good.
