Instructions

  1. In a medium bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
  2. Beat in the egg until combined.
  3. In a separate small bowl, whisk together the flour, cinnamon, and salt.
  4. Gradually add the dry ingredients to the cream cheese mixture, mixing until just combined. Be careful not to overmix.
  5. On a lightly floured surface, unroll the pie crusts.
  6. Use a round cookie cutter (about 2-3 inches in diameter) to cut out circles from the pie crusts. Re-roll scraps as needed.
  7. Place a small spoonful of the cream cheese mixture in the center of half of the pie crust circles.

  9. Heat about 2 inches of vegetable oil in a deep fryer or large pot to 350°F (175°C).
  10. Carefully place a few cheesecake bites into the hot oil, being careful not to overcrowd the pot.
  11. Fry for 2-3 minutes, or until golden brown, flipping halfway through.
  12. Remove the fried cheesecake bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
