Instructions
- In a medium bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
- Beat in the egg until combined.
- In a separate small bowl, whisk together the flour, cinnamon, and salt.
- Gradually add the dry ingredients to the cream cheese mixture, mixing until just combined. Be careful not to overmix.
- On a lightly floured surface, unroll the pie crusts.
- Use a round cookie cutter (about 2-3 inches in diameter) to cut out circles from the pie crusts. Re-roll scraps as needed.
- Place a small spoonful of the cream cheese mixture in the center of half of the pie crust circles.
- Top with another pie crust circle, pressing the edges to seal. Use a fork to crimp the edges for a decorative seal.
- Heat about 2 inches of vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Carefully place a few cheesecake bites into the hot oil, being careful not to overcrowd the pot.
- Fry for 2-3 minutes, or until golden brown, flipping halfway through.
- Remove the fried cheesecake bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Dust with powdered sugar (optional) and serve immediately with your favorite toppings like strawberry sauce.
