- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, cold and cubed
- ¼ cup ice water
- 1 pound fresh figs, preferably Black Mission, sliced
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons apricot preserves, warmed (optional)
Instructions
- Make the crust: In a food processor, combine flour and salt. Add cold butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, pulsing until the dough just comes together.
- Chill the dough: Form the dough into a disc, wrap it in plastic wrap, and chill for at least 30 minutes.
- Preheat and prepare: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a tart pan.
- Assemble the tart: Arrange the sliced figs over the crust. Sprinkle with sugar and drizzle with lemon juice.
- Bake: Bake for 35-40 minutes, or until the crust is golden brown and the figs are tender.
- Cool and glaze (optional): Let the tart cool completely. If desired, brush with warmed apricot preserves.
- Serve: Slice and serve the fig tart.
Notes
- For a richer crust, use a combination of butter and shortening.
- If your figs are not very sweet, you can add a bit more sugar.
- Serve the tart warm or at room temperature.
- Garnish with a dollop of whipped cream or a scoop of vanilla ice cream.
