Description

These Firecracker Popsicles are the perfect treat for a hot day! They’re a fun, refreshing, and patriotic dessert that everyone will love. With layers of red, white, and blue, they’re as beautiful as they are delicious.


Ingredients

Scale
  • 1 cup water
  • 1 cup granulated sugar
  • 1 (12 ounce) can frozen raspberry lemonade concentrate, thawed
  • 1/2 cup water
  • 1/2 cup blue raspberry drink mix
  • Popsicle molds
  • Popsicle sticks

Instructions

  1. In a small saucepan, combine 1 cup water and sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let cool completely.
  2. In a blender, combine the raspberry lemonade concentrate, 1/2 cup water, and the cooled sugar syrup. Blend until well combined.
  3. Pour the raspberry lemonade mixture into the popsicle molds, filling about 1/3 of the way.
  4. Freeze for about 1 hour, or until partially frozen.
  5. In a separate bowl, mix the blue raspberry drink mix with 1/2 cup of water.
  6. Pour the blue raspberry mixture on top of the partially frozen raspberry layer, filling another 1/3 of the mold.
  7. Freeze for another hour, or until partially frozen.
  8. Top with the remaining raspberry lemonade mixture.
  9. Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  10. To unmold, run the molds under warm water for a few seconds.

Notes

  • For a creamier popsicle, add a splash of heavy cream to the raspberry lemonade mixture.
  • If you don’t have popsicle molds, you can use small paper cups and insert popsicle sticks.
  • Adjust the sweetness to your liking by adding more or less sugar.
