Ingredients

  • 1 kg fresh figs, trimmed
  • 500g granulated sugar
  • 1/4 cup water
  • 1/4 cup lemon juice
  • Pinch of salt

Instructions

  1. Rinse the figs and trim off the stems. Chop the figs into small pieces.
  2. In a large, heavy-bottomed saucepan, combine the chopped figs, sugar, water, lemon juice, and salt.
  3. Stir well to mix the ingredients.
  4. Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally to prevent sticking.
  5. Reduce the heat to low and continue to simmer for about 45-60 minutes, or until the jam has thickened to your desired consistency. Stir frequently, especially towards the end, to prevent burning.
  6. To test the jam’s readiness, place a small spoonful on a chilled plate. Let it cool for a minute, then push the jam with your finger. If it wrinkles, it’s ready.
  7. Once the jam is ready, remove it from the heat. Let it cool slightly before transferring it to sterilized jars.
  8. Seal the jars and process them in a boiling water bath for 10 minutes to ensure they are properly preserved (optional, for longer storage).
  9. Let the jars cool completely. The jam will continue to thicken as it cools.
  10. Store the unopened jars in a cool, dark place for up to a year. Once opened, store the jam in the refrigerator.

Notes

  • For a smoother jam, you can use an immersion blender to pulse the jam after it has cooked for about 30 minutes, or before jarring.
  • If your figs are not very sweet, you may need to add a bit more sugar to taste.
  • Sterilize jars and lids before using to ensure the jam’s longevity. Wash jars and lids in hot, soapy water, then rinse well. Place the jars in a preheated oven at 200°F (93°C) for 10 minutes. Place lids in simmering water for 10 minutes.
  • Adjust the cooking time based on the desired consistency. For a runnier jam, cook for a shorter time. For a thicker jam, cook for longer.
