- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1 pound dried figs, stemmed
- 1/2 cup water
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
- In a food processor, combine the figs, water, and lemon juice. Process until a thick paste forms.
- On a lightly floured surface, divide the dough in half. Roll out each half into a rectangle about 1/4 inch thick.
- Spread the fig filling evenly over one rectangle of dough. Top with the second rectangle of dough.
- Cut the dough into bars, about 1 inch wide and 3 inches long.
- Place the bars on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown.
- Let cool completely on a wire rack before serving.
Notes
- For a spicier flavor, add a pinch of cinnamon or nutmeg to the dough.
- Store fig bars in an airtight container at room temperature for up to 3 days.
- You can substitute other dried fruits for the figs, such as dates or apricots.
