Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 pound dried figs, stemmed
  • 1/2 cup water
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  5. In a food processor, combine the figs, water, and lemon juice. Process until a thick paste forms.
  6. On a lightly floured surface, divide the dough in half. Roll out each half into a rectangle about 1/4 inch thick.
  7. Spread the fig filling evenly over one rectangle of dough. Top with the second rectangle of dough.
  8. Cut the dough into bars, about 1 inch wide and 3 inches long.
  9. Place the bars on the prepared baking sheet.
  10. Bake for 15-20 minutes, or until golden brown.
  11. Let cool completely on a wire rack before serving.

  • For a spicier flavor, add a pinch of cinnamon or nutmeg to the dough.
