- 1 cup Whole Milk (chilled)
- 1/2 cup Condensed Milk (adjust to taste)
- 1/4 cup Rose Syrup (Rooh Afza or similar)

- 1/4 cup Falooda Vermicelli (cooked and rinsed in cold water)
- 2 tablespoons Sabja Seeds (Basil Seeds, soaked for 30 minutes)
- 1/4 cup Mixed Nuts (pistachios and almonds, roughly chopped)
- 1/4 cup Sweet Jelly Cubes (optional)
- A few drops of Pink Food Coloring (optional, for vibrant color)
Instructions
- Prepare the Falooda Sev: Boil the falooda vermicelli according to package directions. Drain immediately and rinse thoroughly under cold running water to stop cooking and remove excess starch. Set aside.
- Soak Sabja Seeds: Soak the sabja seeds in 1 cup of water for at least 30 minutes until they swell and develop a gelatinous coating. Drain excess water.
- Prepare the Ice Cream Base: In a large bowl, whisk together the heavy cream, whole milk, condensed milk, rose syrup, vanilla extract, and pink food coloring (if using) until well combined and slightly thickened.
- Layering (No-Churn Method): In a freezer-safe container (like a loaf pan), begin layering the ingredients. Start with a thin layer of the rose mixture. Follow with a layer of the prepared vermicelli, a sprinkle of soaked sabja seeds, and some chopped nuts.
- Repeat the layering process until all the mixture is used, finishing with a layer of the rose mixture topped with the remaining nuts.
- Freeze: Cover the container tightly with plastic wrap, ensuring the wrap touches the surface of the ice cream mixture to prevent ice crystals. Freeze for a minimum of 8 hours, or preferably overnight, until firm.
- Serving: To serve, let the ice cream sit at room temperature for 5-10 minutes to soften slightly. Scoop into bowls, and garnish with extra rose syrup, chopped pistachios, and perhaps a cherry for a truly authentic Falooda Ice Cream experience.

- For a richer flavor, use evaporated milk instead of regular whole milk.
