Description

These spooky eyeball cupcakes are perfect for Halloween parties or any occasion that calls for a touch of eerie fun. Moist vanilla cupcakes topped with creepy candy eyeballs and a swirl of buttercream frosting.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup powdered sugar
  • ¼ cup unsalted butter, softened
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Assorted candy eyeballs

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  8. While cupcakes cool, prepare the frosting: In a medium bowl, beat together softened butter, powdered sugar, milk, and vanilla extract until smooth and creamy.
  9. Once cupcakes are completely cool, frost them with the buttercream frosting.
  10. Gently press candy eyeballs into the frosting to create the “eyeball” effect.

Notes

  • For extra spooky cupcakes, you can tint the frosting with a few drops of black or red food coloring.
  • Store frosted cupcakes in an airtight container at room temperature for up to 3 days.
  • These cupcakes can be made ahead of time and frosted just before serving.
