Instructions
- Make the Vanilla Pudding: In a large bowl, whisk together the instant vanilla pudding mix and cold milk. Whisk for 2 minutes or until well combined.
- Fold in Whipped Topping: Gently fold in the thawed whipped topping until well combined.
- Assemble the Cake: In a 9×13 inch baking dish, create a layer of graham crackers.
- Add Pudding Layer: Spread half of the vanilla pudding mixture over the graham crackers.
- Repeat Layers: Add another layer of graham crackers, followed by the remaining pudding mixture.
- Final Layer: Top with a final layer of graham crackers.
- Prepare the Chocolate Ganache: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Melt Chocolate: Remove from heat and add the semi-sweet chocolate chips and butter. Let it sit for a minute, then whisk until smooth and glossy.
- Pour Ganache: Pour the chocolate ganache evenly over the top layer of graham crackers.
- Chill: Cover the cake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the graham crackers to soften.
- Serve: Cut into squares and serve chilled.
