Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 large orange
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup dried cranberries
- ½ cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the dried cranberries and white chocolate chips (if using).
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra burst of orange flavor, you can add 1-2 tablespoons of fresh orange juice to the dough.
- Ensure the dried cranberries are plump. If they seem dry, soak them in warm water for 10 minutes, then drain well.
- Store cooled cookies in an airtight container at room temperature for up to 3 days.
- These cookies can be made ahead and frozen. Bake from frozen, adding a minute or two to the baking time.
