  • 1/2 cup heavy whipping cream, cold
  • 1/3 cup granulated sugar (or substitute with your preferred sweetener)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Cottage Cheese: Place the full-fat cottage cheese in a high-speed blender or food processor. Blend until the mixture is perfectly smooth, resembling thick Greek yogurt. This step is crucial for a smooth texture.
  2. Sweeten: Add the sugar (or sweetener), vanilla extract, and salt to the blended cottage cheese. Pulse briefly to combine.
  3. Whip the Cream: In a separate, chilled bowl, use an electric mixer to whip the cold heavy cream until stiff peaks form.
  4. Fold Together: Gently fold about one-third of the whipped cream into the cottage cheese mixture to lighten it. Then, gently fold in the remaining whipped cream until just combined, being careful not to deflate the air.
  5. Freeze: Pour the mixture into a freezer-safe loaf pan or airtight container. Cover the surface directly with plastic wrap (to prevent ice crystals) and then cover the container tightly with a lid or foil.
  6. Harden: Freeze for at least 6 hours, or preferably overnight, until firm.
  7. Serve: Let the ice cream sit on the counter for 5–10 minutes before scooping and serving.

Notes

  • For a vanilla bean flavor, scrape the seeds from half a vanilla bean into the mixture.
  • To make this dairy-free, substitute the cottage cheese with silken tofu (blended until smooth) and the heavy cream with full-fat canned coconut cream (whipped).
