Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, melted
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup cottage cheese, full-fat or low-fat
- Optional: 1/2 cup chocolate chips or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the melted butter, sugar, cocoa powder, salt, and baking powder until smooth.
- Whisk in the vanilla extract and eggs one at a time, mixing well after each addition.
- Gradually add the flour, mixing until just combined. Do not overmix.
- In a separate bowl, blend the cottage cheese until smooth.
- Gently fold the blended cottage cheese into the brownie batter.
- If desired, fold in the chocolate chips or chopped nuts.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let the brownies cool completely in the pan before cutting and serving.
Notes
- For a smoother cottage cheese texture, use a food processor or blender to blend the cottage cheese before adding it to the batter.
- Adjust baking time based on your oven. Brownies are done when the edges are set and a toothpick comes out with moist crumbs.
- Store leftover brownies in an airtight container at room temperature for up to 3 days.
