Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together the flour, shredded coconut, baking powder, baking soda, and salt.
- In a separate bowl, combine the cottage cheese, melted butter, eggs, vanilla extract, and sugar. Mix until smooth.
- Fold the crushed pineapple into the wet mixture.
- Pour the wet ingredients into the dry ingredients and stir until just combined—do not overmix. The batter will be slightly lumpy.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
