Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Make the Crust: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the vanilla extract.
- Gradually add the flour and salt, mixing until just combined and a dough forms.
- Press the dough evenly into the bottom of the prepared baking pan.
- Bake the crust for 15-18 minutes, or until lightly golden brown. Remove from oven and let cool slightly while preparing the filling.
- Make the Filling: In a medium saucepan, combine the brown sugar, butter, corn syrup, and evaporated milk.
- Cook over medium heat, stirring constantly, until the butter is melted and the mixture is smooth. Bring to a gentle boil and cook for 2-3 minutes, stirring.
- Remove from heat and stir in the vanilla extract, chopped pecans, and cinnamon.
- Pour the pecan filling evenly over the partially baked crust.
- Bake for another 20-25 minutes, or until the filling is set and bubbly.
- Cool and Cut: Let the bars cool completely in the pan on a wire rack before cutting into squares.
