Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Make the Crust: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the vanilla extract.
  3. Gradually add the flour and salt, mixing until just combined and a dough forms.
  4. Press the dough evenly into the bottom of the prepared baking pan.
  5. Bake the crust for 15-18 minutes, or until lightly golden brown. Remove from oven and let cool slightly while preparing the filling.
  6. Make the Filling: In a medium saucepan, combine the brown sugar, butter, corn syrup, and evaporated milk.
  7. Cook over medium heat, stirring constantly, until the butter is melted and the mixture is smooth. Bring to a gentle boil and cook for 2-3 minutes, stirring.
  8. Remove from heat and stir in the vanilla extract, chopped pecans, and cinnamon.
  9. Pour the pecan filling evenly over the partially baked crust.
  10. Bake for another 20-25 minutes, or until the filling is set and bubbly.
  11. Cool and Cut: Let the bars cool completely in the pan on a wire rack before cutting into squares.
