  • 1 pound fresh strawberries, hulled and sliced
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup milk or heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Make the Chocolate Cake: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add buttermilk, oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes. Gradually add boiling water and mix until combined. Pour batter into prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes before inverting onto wire racks to cool completely.
  2. Make the Vanilla Cake: Grease and flour two 9-inch round cake pans. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk, butter, eggs, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes. Pour batter into prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.   3. Make the Strawberry Filling: In a medium saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries soften and release their juices, about 10-15 minutes. Remove from heat and let cool completely.
  4. Make the Frosting: In a large bowl, beat butter with an electric mixer until light and fluffy. Gradually add powdered sugar, beating until combined. Add milk or heavy cream and vanilla extract. Beat until smooth and creamy.
  5. Assemble the Cake: Place one layer of chocolate cake on a serving plate. Spread with a layer of strawberry filling. Top with a layer of vanilla cake. Spread with frosting. Repeat layers, alternating cake flavors, ending with frosting on top and sides of the cake. Decorate as desired.
