Ingredients

Scale
  • For the Cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the Strawberry Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup fresh strawberries, pureed
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For Garnish:
  • 1 pint fresh strawberries, sliced

Instructions

  1. Make the Cake: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking sheet.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the buttermilk, oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes.
  4. Gradually add the boiling water and mix until combined. The batter will be thin.
  5. Pour the batter into the prepared baking sheet and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely in the pan before frosting.
  7. Make the Frosting: In a large bowl, beat the softened butter until creamy.
  8. Gradually add the powdered sugar, beating until smooth.
  9. Add the strawberry puree, vanilla extract, and salt. Beat until light and fluffy.
  10. Assemble the Cake: Once the cake is completely cool, frost it with the strawberry frosting.
  11. Arrange the sliced strawberries on top of the frosting.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • Make sure the cake is completely cool before frosting to prevent the frosting from melting.
  • You can adjust the sweetness of the frosting by adding more or less powdered sugar.
  • Store leftover cake in an airtight container in the refrigerator.
