Description

Indulge in a decadent chocolate strawberry cake, a perfect combination of rich chocolate and fresh, juicy strawberries. This cake is ideal for special occasions or a delightful treat any day of the week.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 pound fresh strawberries, hulled and sliced
  • Chocolate frosting (recipe below)

Chocolate Frosting Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together sugar, eggs, buttermilk, oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Carefully pour in the boiling water and mix until the batter is smooth.
  6. Pour batter evenly into the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  9. Make the chocolate frosting: In a large bowl, beat the softened butter until light and fluffy. Gradually add powdered sugar and cocoa powder, alternating with milk, until fully incorporated. Stir in vanilla.
  10. Once the cakes are completely cool, level the tops if necessary. Place one cake layer on a serving plate and spread with a generous layer of frosting. Top with sliced strawberries.
  11. Place the second cake layer on top and frost the entire cake with the remaining frosting. Decorate with more sliced strawberries, if desired.
  12. Chill for at least 30 minutes before serving.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • You can substitute the buttermilk with a mixture of 1 cup milk and 1 tablespoon of lemon juice or white vinegar; let it sit for 5 minutes before using.
  • Adjust the amount of sugar in the frosting to your taste.
  • Store leftover cake in an airtight container in the refrigerator.
