Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk together sugar, eggs, buttermilk, oil, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Carefully pour in the boiling water and mix until the batter is smooth.
- Pour half of the batter into the prepared pan.
- Sprinkle half of the diced mangoes over the batter in the pan.
- Pour the remaining batter over the mangoes.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- For the frosting, whip the heavy cream and powdered sugar in a bowl until stiff peaks form.
- Once the cake is completely cool, frost it with the whipped cream.
- Garnish with chocolate shavings or additional mango, if desired.
- Slice and serve.
Notes
- For a richer flavor, use dark chocolate cocoa powder.
- If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk; let it sit for 5 minutes before using.
