- 1.5 quarts chocolate ice cream, slightly softened
Instructions
- Line a baking sheet with parchment paper.
- Scoop ice cream onto cookies.
- Place a scoop of ice cream on the flat side of half of the cookies.
- Top with the remaining cookies, flat side down, to create sandwiches.
- Place the sandwiches on the prepared baking sheet.
- Freeze for at least 2 hours, or until firm.
