Ingredients

Scale
  • For the Cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the Chocolate Buttercream:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • ¾ cup unsweetened cocoa powder
  • ½ cup milk or heavy cream
  • 1 teaspoon vanilla extract
  • For the Chocolate Ganache:
  • 1 cup heavy cream
  • 10 ounces semi-sweet chocolate, chopped
  • For Decoration (Optional):
  • Assorted candies (e.g., chocolate bars, truffles, pretzels)
  • Sprinkles

Instructions

  1. Make the Cake: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes.
  4. Gradually add boiling water, mixing until combined. The batter will be thin.
  5. Pour batter evenly into prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  7. Make the Chocolate Buttercream: In a large bowl, beat butter with an electric mixer until light and fluffy.
  8. Gradually add powdered sugar and cocoa powder, alternating with the milk or cream, beating until smooth and creamy.
  9. Stir in vanilla extract.
  10. Make the Chocolate Ganache: Heat heavy cream in a saucepan over medium heat until it just begins to simmer.
  11. Remove from heat and pour over chopped chocolate. Let stand for 1 minute, then whisk until smooth and glossy.
  12. Assemble the Cake: Level the cakes with a serrated knife if needed. Place one cake layer on a serving plate or cake stand.
  13. Spread a generous layer of buttercream on top. Top with the second cake layer.
  14. Frost the entire cake with the remaining buttercream.
  15. Create the Drip: Let the ganache cool slightly until it thickens but is still pourable.
  16. Pour the ganache over the edges of the cake, letting it drip down the sides.
  17. Decorate: Immediately decorate the top of the cake with candies and sprinkles.
  18. Refrigerate the cake for at least 30 minutes to allow the ganache to set.
  19. Slice and serve!

Notes

  • For a richer cake, use dark cocoa powder.
  • Don’t overbake the cake; it should still be slightly moist.
  • If the ganache is too thick, gently warm it in the microwave in short bursts.
  • Get creative with the decorations! Use his favorite candies, cookies, or even a personalized cake topper.
