Description

Moist and tender chocolate chip zucchini muffins that are perfect for using up summer zucchini. Loaded with chocolate chips and subtly spiced, these muffins are a delicious way to sneak in some veggies.


Ingredients

  • 1½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups shredded zucchini (about 1 medium zucchini, squeezed dry)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, whisk together granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Stir in the shredded zucchini until combined.
  5. Add the dry ingredients to the wet ingredients and stir just until no dry flour remains. Do not overmix.
  6. Fold in the chocolate chips.
  7. Divide batter evenly among the muffin cups, filling each about ¾ full.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs).
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Be sure to squeeze the shredded zucchini in a clean kitchen towel to remove excess moisture, otherwise the muffins may be soggy.
  • You can replace up to half of the all-purpose flour with whole wheat flour for a heartier texture.
  • Store muffins in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
