- ¾ cup unsweetened cocoa powder

- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Chocolate frosting (recipe below)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add buttermilk, oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes.
- Gradually add boiling water, mixing until combined. The batter will be thin.
- Pour batter evenly into prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- Frost with chocolate frosting.

- For a richer flavor, use strong brewed coffee instead of boiling water.
- Make sure your ingredients are at room temperature for the best results.
- You can adjust the baking time depending on your oven.
- For the frosting: In a bowl, cream together 1 cup (2 sticks) softened unsalted butter, 3 cups powdered sugar, ¾ cup unsweetened cocoa powder, ½ cup milk, 1 teaspoon vanilla extract, and a pinch of salt. Beat until light and fluffy.
