Description

Indulge in the decadent delight of Chili Chocolate Lava Cakes, a perfect blend of rich chocolate and a subtle kick of chili. This recipe creates individual molten cakes with a gooey center, ideal for a special dessert or a cozy night in.

Ingredients

Scale
  • 6 ounces bittersweet chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter, cut into pieces
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon chili powder, or to taste
  • Pinch of salt
  • Powdered sugar, for dusting (optional)
  • Fresh raspberries or other berries, for serving (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Grease and flour two 6-ounce ramekins.
  2. In a heatproof bowl set over a simmering pot of water (or in the microwave in 30-second intervals, stirring in between), melt the chocolate and butter, stirring until smooth.
  3. In a separate bowl, whisk together the sugar, eggs, and egg yolks until pale and slightly thickened. Stir in the vanilla extract.
  4. Gently fold the melted chocolate mixture into the egg mixture until combined.
  5. In a small bowl, whisk together the flour, chili powder, and salt.
  6. Gradually add the dry ingredients to the chocolate mixture, folding until just combined. Do not overmix.
  7. Divide the batter evenly between the prepared ramekins.
  8. Bake for 12-15 minutes, or until the edges are set and the center is still soft.
  9. Let the cakes cool in the ramekins for a minute or two before inverting them onto plates.
  10. Dust with powdered sugar and serve immediately with fresh berries, if desired.

Notes

  • For a spicier kick, use a pinch of cayenne pepper in addition to or instead of chili powder.
  • The baking time may vary depending on your oven. Keep a close eye on the cakes to prevent overbaking.
  • Serve immediately for the best molten center experience.
  • If you don’t have ramekins, you can use oven-safe mugs or small bowls.
