- 6 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract (optional)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/2 cup milk
- Turbinado sugar, for sprinkling (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, combine cherries, 1 cup sugar, cornstarch, lemon juice, and almond extract (if using). Stir gently to combine.
- Pour the cherry mixture into the prepared baking dish.
- In a separate bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk until just combined. Do not overmix.
- Drop spoonfuls of the dough evenly over the cherry mixture.
- Sprinkle with turbinado sugar, if desired.
- Bake for 40-50 minutes, or until the crust is golden brown and the cherry filling is bubbly.
- Let cool slightly before serving. Serve warm with vanilla ice cream or whipped cream.
Notes
- For a thicker filling, you can add an extra tablespoon of cornstarch.
- If using frozen cherries, do not thaw them before using.
- Feel free to add a pinch of cinnamon or nutmeg to the cherry filling for extra flavor.
- Leftover cobbler can be stored in the refrigerator for up to 3 days.
