- 1 cup whole milk
- 1/2 cup heavy cream

- 4 large eggs
- 1/2 cup all-purpose flour
- 2 tablespoons unsalted butter, melted, plus more for greasing the pan
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch cast iron skillet or baking dish with butter. Sprinkle with a little granulated sugar and tap out the excess.
- In a bowl, whisk together the eggs, sugar, and salt until well combined.
- Whisk in the milk, heavy cream, and vanilla extract.
- Gradually whisk in the flour until the batter is smooth.
- Arrange the pitted cherries in the prepared skillet or baking dish.
- Pour the batter over the cherries.
- Bake for 45-55 minutes, or until the clafoutis is puffed up and golden brown, and a knife inserted into the center comes out clean.
- Let cool slightly before dusting with powdered sugar (optional) and serving.

- For a richer flavor, use brown sugar instead of granulated sugar.
