  • 1 1/2 pounds fresh cherries, stemmed and pitted
  • 1/2 cup granulated sugar, plus more for dusting
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsalted butter, melted, plus more for greasing the pan
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch cast iron skillet or baking dish with butter. Sprinkle with a little granulated sugar and tap out the excess.
  2. In a bowl, whisk together the eggs, sugar, and salt until well combined.
  3. Whisk in the milk, heavy cream, and vanilla extract.
  4. Gradually whisk in the flour until the batter is smooth.
  5. Arrange the pitted cherries in the prepared skillet or baking dish.
  6. Pour the batter over the cherries.
  7. Bake for 45-55 minutes, or until the clafoutis is puffed up and golden brown, and a knife inserted into the center comes out clean.
  8. Let cool slightly before dusting with powdered sugar (optional) and serving.

  • For a richer flavor, use brown sugar instead of granulated sugar.
