Ingredients

  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup (40g) chocolate chips, plus extra for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 6-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk together sugar, oil, egg, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in chocolate chips.
  6. Fill each muffin liner about 2/3 full with batter.
  7. Sprinkle a few extra chocolate chips on top of each brownie cup.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
