- 1/2 cup (60g) all-purpose flour
- 1/4 cup (25g) unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup (40g) chocolate chips, plus extra for topping
Instructions
- Preheat oven to 350°F (175°C). Line a 6-cup muffin tin with paper liners.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk together sugar, oil, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in chocolate chips.
- Fill each muffin liner about 2/3 full with batter.
- Sprinkle a few extra chocolate chips on top of each brownie cup.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
