Description

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • 1 (15 ounce) can pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine graham cracker crumbs and ¼ cup granulated sugar. Stir in melted butter until well combined. Press mixture evenly into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes. Remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese with ¾ cup granulated sugar until smooth.
  5. Beat in cinnamon, ginger, nutmeg, and cloves.
  6. Stir in pumpkin puree until combined.
  7. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and heavy cream.
  8. Pour filling over the prepared crust.
  9. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour.
  11. Remove from oven and let cool completely on a wire rack.
  12. Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.

Notes

  • For an extra nutty flavor, you can brown the butter used for the crust. Melt the butter in a saucepan over medium heat, swirling occasionally, until it turns a golden brown and smells nutty. Let it cool slightly before using.
