- 1/2 teaspoon baking soda

- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 teaspoon lemon zest
- 1/4 cup lemon juice
- 1/2 cup milk
- 1 1/2 cups fresh blueberries
- Optional: Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together sugar and butter until light and fluffy. Beat in eggs one at a time, then stir in lemon zest and lemon juice.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
- Gently fold in the blueberries.
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar, if desired.
Notes
- For best results, use fresh blueberries.
- You can freeze the bread for later. Wrap it tightly in plastic wrap and then foil.
