Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries
  • Optional: Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together sugar and butter until light and fluffy. Beat in eggs one at a time, then stir in lemon zest and lemon juice.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  5. Gently fold in the blueberries.
  6. Pour batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Dust with powdered sugar, if desired.

  • You can freeze the bread for later. Wrap it tightly in plastic wrap and then foil.
