For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 32 ounces cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs

For the Blueberry Crumble:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3 cups fresh blueberries

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let cool.
  2. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla. Add eggs one at a time, mixing until just combined.
  3. Assemble the Cheesecake: Pour the cheesecake filling over the cooled crust.
  4. Prepare the Crumble: In a bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gently fold in the blueberries.
  5. Add Crumble: Sprinkle the crumble topping evenly over the cheesecake filling.
  6. Bake: Bake for 55-65 minutes, or until the edges are set and the center jiggles slightly.
  7. Cool: Let the cheesecake cool in the oven with the door ajar for 1 hour. Then, refrigerate for at least 4 hours, or preferably overnight, before serving.

Notes

  • For a smoother cheesecake, make sure your cream cheese is completely softened.
  • You can use frozen blueberries for the crumble, but do not thaw them first.
