For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 32 ounces cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
For the Blueberry Crumble:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 3 cups fresh blueberries
Instructions
- Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let cool.
- Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla. Add eggs one at a time, mixing until just combined.
- Assemble the Cheesecake: Pour the cheesecake filling over the cooled crust.
- Prepare the Crumble: In a bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gently fold in the blueberries.
- Add Crumble: Sprinkle the crumble topping evenly over the cheesecake filling.
- Bake: Bake for 55-65 minutes, or until the edges are set and the center jiggles slightly.
- Cool: Let the cheesecake cool in the oven with the door ajar for 1 hour. Then, refrigerate for at least 4 hours, or preferably overnight, before serving.
Notes
- For a smoother cheesecake, make sure your cream cheese is completely softened.
- You can use frozen blueberries for the crumble, but do not thaw them first.
- To prevent the crust from getting soggy, pre-bake it.
