Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 8×8 inch baking pan. Bake for 8-10 minutes, or until lightly golden. Let cool.
  2. Make the Cheesecake Layer: In a mixing bowl, beat cream cheese and sugar until smooth. Beat in the egg and vanilla extract until combined.
  3. Assemble the Bars: Pour the cheesecake mixture over the cooled crust.
  4. Make the Blueberry Topping: In a saucepan, combine blueberries, sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally.
  5. In a small bowl, whisk together cornstarch and water. Add this slurry to the blueberry mixture and cook until thickened, about 1-2 minutes.
  6. Pour the blueberry topping over the cheesecake layer.
  7. Bake: Bake for 25-30 minutes, or until the cheesecake is set. Let cool completely in the pan, then refrigerate for at least 2 hours before cutting and serving.
