Ingredients
Scale
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/4 cup cold vegetable shortening, cut into pieces
- 4–6 tablespoons ice water
- 6 cups fresh blackberries
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon unsalted butter, cut into small pieces (for topping)
- 1 large egg, lightly beaten (for egg wash – optional)
- 1 tablespoon granulated sugar (for sprinkling – optional)
Instructions
- Make the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling: In a large bowl, gently toss together the blackberries, sugar, flour, lemon juice, cinnamon, and nutmeg.
- Assemble the Pie: On a lightly floured surface, roll out half of the dough into a 12-inch circle. Transfer the dough to a 9-inch pie plate. Trim and crimp the edges. Pour the blackberry filling into the crust.
- Add the Top Crust: Roll out the remaining dough and either place it over the filling as a full crust or cut into strips for a lattice top. If using a full crust, cut slits in the top for steam to escape.
- Add Egg Wash (Optional): Brush the top crust with the beaten egg and sprinkle with granulated sugar.
- Bake the Pie: Place the pie on a baking sheet and bake in a preheated oven at 375°F (190°C) for 50-60 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with foil.
- Cool and Serve: Let the pie cool completely on a wire rack before serving. This allows the filling to set. Serve warm or at room temperature.
Notes
- For a richer crust, use all butter.
- If using frozen blackberries, thaw them completely and drain off excess liquid before using.
- You can add a tablespoon of cornstarch to the filling to help thicken it.
- Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
