  • 1 large egg, lightly beaten (for egg wash – optional)
  • 1 tablespoon granulated sugar (for sprinkling – optional)

Instructions

  1. Make the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: In a large bowl, gently toss together the blackberries, sugar, flour, lemon juice, cinnamon, and nutmeg.
  3. Assemble the Pie: On a lightly floured surface, roll out half of the dough into a 12-inch circle. Transfer the dough to a 9-inch pie plate. Trim and crimp the edges. Pour the blackberry filling into the crust.
  4. Add the Top Crust: Roll out the remaining dough and either place it over the filling as a full crust or cut into strips for a lattice top. If using a full crust, cut slits in the top for steam to escape.
  5. Add Egg Wash (Optional): Brush the top crust with the beaten egg and sprinkle with granulated sugar.
  6. Bake the Pie: Place the pie on a baking sheet and bake in a preheated oven at 375°F (190°C) for 50-60 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with foil.
