  • 1 1/2 cups all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • For the Filling:
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice (from about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour
  • For the Topping:
  • 1 cup fresh blackberries
  • 2 tablespoons granulated sugar

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a food processor, combine flour, cold butter, powdered sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  2. Press the crust mixture into the bottom of an 8×8 inch baking pan lined with parchment paper.
  3. Bake the crust for 15-20 minutes, or until lightly golden.
  4. Make the Filling: While the crust is baking, whisk together eggs, sugar, lemon juice, lemon zest, and flour.
  5. Pour the lemon filling over the baked crust.
  6. Add the Topping: Sprinkle the blackberries evenly over the lemon filling. Sprinkle the blackberries with 2 tablespoons of granulated sugar.
  7. Bake for 20-25 minutes, or until the filling is set.
  8. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For a tangier filling, add an extra tablespoon of lemon juice.
  • If using frozen blackberries, thaw them slightly before using and pat them dry to prevent extra moisture.
  • Dust the cooled bars with powdered sugar for a prettier presentation.
