- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/4 cup ice water, plus more if needed
- 4 cups fresh blackberries
- 1/4 cup granulated sugar, plus more for sprinkling
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 egg, beaten, for egg wash
Instructions
- Make the dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, a tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the filling: In a bowl, gently toss the blackberries with the granulated sugar, cornstarch, and lemon juice.
- Assemble the galette: On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
- Spread the blackberry filling in the center of the dough, leaving a 1 1/2-inch border.
- Fold the edges of the dough over the filling, pleating as you go.
- Brush the crust with the beaten egg and sprinkle with sugar.
- Bake: Bake in a preheated oven at 375°F (190°C) for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool slightly before serving.
Notes
- For a richer crust, use all butter and ensure it’s very cold.
- You can substitute other berries, such as raspberries or blueberries, for the blackberries.
