  • 1/4 cup ice water, plus more if needed
  • 4 cups fresh blackberries
  • 1/4 cup granulated sugar, plus more for sprinkling
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 egg, beaten, for egg wash

Instructions

  1. Make the dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, a tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the filling: In a bowl, gently toss the blackberries with the granulated sugar, cornstarch, and lemon juice.
  4. Assemble the galette: On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
  5. Spread the blackberry filling in the center of the dough, leaving a 1 1/2-inch border.
  6. Fold the edges of the dough over the filling, pleating as you go.
  7. Brush the crust with the beaten egg and sprinkle with sugar.
  8. Bake: Bake in a preheated oven at 375°F (190°C) for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
