Ingredients
Scale
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- For the Cheesecake Filling:
- 2 (8 ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- For the Blackberry Topping:
- 2 cups fresh blackberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, or until lightly golden. Let cool.
- Make the Filling: In a large bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing until just combined. Do not overmix.
- Assemble the Cheesecake: Pour the cheesecake filling over the cooled crust.
- Bake the Cheesecake: Bake for 50-60 minutes, or until the edges are set and the center jiggles slightly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours, or preferably overnight.
- Make the Blackberry Topping: In a saucepan, combine blackberries, sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally.
- Thicken the Topping: In a small bowl, whisk together cornstarch and water. Add to the blackberry mixture and cook, stirring constantly, until thickened, about 1-2 minutes. Remove from heat and let cool.
- Serve: Top the cheesecake with the blackberry topping before serving.
Notes
- For a smoother filling, make sure your cream cheese is completely softened.
- You can use frozen blackberries for the topping; just thaw them first.
- Feel free to add a tablespoon of lemon zest to the cheesecake filling for extra flavor.
