Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, or until lightly golden. Let cool.
  2. Make the Filling: In a large bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing until just combined. Do not overmix.
  3. Assemble the Cheesecake: Pour the cheesecake filling over the cooled crust.
  4. Bake the Cheesecake: Bake for 50-60 minutes, or until the edges are set and the center jiggles slightly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours, or preferably overnight.
  5. Make the Blackberry Topping: In a saucepan, combine blackberries, sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally.
  6. Thicken the Topping: In a small bowl, whisk together cornstarch and water. Add to the blackberry mixture and cook, stirring constantly, until thickened, about 1-2 minutes. Remove from heat and let cool.
  7. Serve: Top the cheesecake with the blackberry topping before serving.
