Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ⅓ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • Black food coloring
  • For Decoration:
  • Black candy melts or dark chocolate
  • White candy melts or white chocolate
  • Edible googly eyes

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Stir in the white vinegar. The batter will be thin.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
  10. Gradually add the powdered sugar and cocoa powder, alternating with the milk, beating until smooth and well combined. Stir in the vanilla extract.
  11. Divide the frosting into two bowls. Leave one bowl plain for the base. Add black food coloring to the other bowl until you achieve a deep black color.
  12. Once cupcakes are completely cool, frost them with the black frosting using an offset spatula or piping bag.
  13. Melt the black candy melts or dark chocolate according to package directions. Place in a piping bag with a small round tip.
  14. Melt the white candy melts or white chocolate according to package directions. Place in a piping bag with a small round tip.
  15. To decorate: Pipe two small black circles for ears on top of each cupcake. Pipe two small white circles for the eyes and a tiny black dot for the nose. Place edible googly eyes on the white circles.

Notes

  • For extra moist cupcakes, you can add 1/4 cup of hot coffee to the batter.
  • Ensure cupcakes are completely cool before frosting to prevent the frosting from melting.
  • Get creative with the cat features! You can use different sized piping tips for different effects.
