  • 4 large ripe bananas, sliced
  • For the Custard:

  • 1/4 cup cornstarch

  • 2 1/2 cups milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • For the Whipped Cream:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Make the Custard: In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk until smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a simmer, about 5-7 minutes.
  3. Remove from heat and whisk a small amount of the hot mixture into the egg yolks to temper them. Then, whisk the egg yolk mixture into the saucepan.
  4. Return to medium heat and cook, stirring constantly, for 1 minute more. Remove from heat.
  5. Stir in butter and vanilla extract until butter is melted and the mixture is smooth.
  6. Pour the custard into a bowl, cover the surface with plastic wrap (to prevent a skin from forming), and refrigerate for at least 2 hours, or until completely chilled.
  7. Assemble the Pie: Arrange a layer of sliced bananas in the bottom of the baked pie crust.
  8. Pour the chilled custard over the bananas, spreading evenly.
  9. Make the Whipped Cream: In a large bowl, beat heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  10. Spread the whipped cream over the custard.
  11. Arrange additional banana slices on top of the whipped cream, if desired.
  12. Refrigerate the pie for at least 1 hour before serving.
