- 4 large ripe bananas, sliced
- For the Custard:
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups milk
- 4 large egg yolks, lightly beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- For the Whipped Cream:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Make the Custard: In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a simmer, about 5-7 minutes.
- Remove from heat and whisk a small amount of the hot mixture into the egg yolks to temper them. Then, whisk the egg yolk mixture into the saucepan.
- Return to medium heat and cook, stirring constantly, for 1 minute more. Remove from heat.
- Stir in butter and vanilla extract until butter is melted and the mixture is smooth.
- Pour the custard into a bowl, cover the surface with plastic wrap (to prevent a skin from forming), and refrigerate for at least 2 hours, or until completely chilled.
- Assemble the Pie: Arrange a layer of sliced bananas in the bottom of the baked pie crust.
- Pour the chilled custard over the bananas, spreading evenly.
- Make the Whipped Cream: In a large bowl, beat heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Spread the whipped cream over the custard.
- Arrange additional banana slices on top of the whipped cream, if desired.
- Refrigerate the pie for at least 1 hour before serving.

- For a richer custard, use whole milk.
