Description

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/4 cup ice water
  • 1 pound fresh apricots, pitted and sliced
  • 1/4 cup granulated sugar, plus extra for sprinkling
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the Dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, mixing until the dough just comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Filling: In a bowl, combine the sliced apricots, granulated sugar, lemon juice, and cinnamon. Gently toss to coat.
  4. Assemble the Galette: On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  5. Arrange the apricot mixture in the center of the dough, leaving a 1-inch border.
  6. Fold the edges of the dough over the filling, pleating as you go.
  7. Brush the dough with the beaten egg and sprinkle with extra sugar.
  8. Bake: Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Let cool slightly before serving.
