- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/4 cup ice water
- 1 pound fresh apricots, pitted and sliced
- 1/4 cup granulated sugar, plus extra for sprinkling
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- 1 egg, beaten (for egg wash)
Instructions
- Make the Dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, mixing until the dough just comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling: In a bowl, combine the sliced apricots, granulated sugar, lemon juice, and cinnamon. Gently toss to coat.
- Assemble the Galette: On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
- Arrange the apricot mixture in the center of the dough, leaving a 1-inch border.
- Fold the edges of the dough over the filling, pleating as you go.
- Brush the dough with the beaten egg and sprinkle with extra sugar.
- Bake: Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool slightly before serving.
Notes
- For a richer crust, use all butter.
- Feel free to add a touch of almond extract to the filling.
