- 1/4 cup all-purpose flour
- 1 teaspoon lemon juice

- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/2 cup milk

Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, combine the sliced apricots, 1/2 cup sugar, flour, and lemon juice. Toss gently to coat. Pour the apricot mixture into the prepared baking dish.
- In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk until just combined. Do not overmix.
- Drop spoonfuls of the biscuit dough over the apricot mixture.
- Sprinkle the top with the remaining 1 tablespoon of sugar (optional).
- Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving. Serve warm, with a scoop of vanilla ice cream or whipped cream, if desired.
Notes
- For a richer flavor, use brown sugar in the biscuit topping.
- If using canned apricots, reduce the sugar in the filling by 2-3 tablespoons, as canned apricots are often sweeter.
