  • For the Crumble Topping:
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Crust: In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Press half of the crust mixture into the bottom of a 9×13 inch baking pan.
  3. Add the Filling: Spread the apricot preserves evenly over the crust.
  4. Make the Crumble Topping: In the same bowl, combine flour, brown sugar, and salt. Cut in the cold butter until the mixture is crumbly.
  5. Sprinkle the crumble topping evenly over the apricot preserves.
  6. Bake: Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until the topping is golden brown.
  7. Cool and Serve: Let the bars cool completely in the pan before cutting into squares.
