- 3 large eggs

- 2 cups grated zucchini (about 2 medium zucchinis), squeezed dry
- 1 cup chopped peeled apples (such as Honeycrisp or Fuji)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the grated zucchini, chopped apples, and nuts (if using) until evenly distributed.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
- Serve plain, or with a dusting of powdered sugar or a drizzle of cream cheese frosting.

- To squeeze the zucchini dry, place grated zucchini in a clean kitchen towel or cheesecloth and wring out as much liquid as possible.
