Description

These apple pie cookies capture all the warm, spiced flavors of classic apple pie in a delightful, bite-sized cookie. Perfect for a quick treat or holiday baking!

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup finely diced peeled apples (about 1 medium apple)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • Optional: Powdered sugar for dusting

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently fold in the finely diced apples.
  6. In a small bowl, combine the brown sugar and 1 teaspoon of cinnamon for the topping.
  7. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  8. Roll rounded tablespoons of dough into balls and place them on the prepared baking sheets, about 2 inches apart.
  9. Flatten each cookie slightly with the bottom of a glass or your palm.
  10. Sprinkle the brown sugar and cinnamon mixture over the tops of the cookies.
  11. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  13. Once cooled, dust with powdered sugar if desired.

Notes

  • Ensure apples are diced very finely so they bake evenly within the cookies.
  • For a stronger apple flavor, you can add a touch of apple extract to the dough.
  • These cookies can be stored in an airtight container at room temperature for up to 3 days.
