Description

This Apple Fritter Cake is a delightful fusion of your favorite apple fritters and a comforting cake. It’s packed with tender chunks of apple, warm spices, and a sweet glaze, making it perfect for breakfast, brunch, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 cup granulated sugar, divided
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup milk
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1 tablespoon lemon juice
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 0.5 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the softened butter and 0.75 cup of the granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. In a separate small bowl, toss the diced apples with the remaining 0.25 cup of granulated sugar and the lemon juice.
  7. Gently fold the coated apples into the cake batter.
  8. Pour the batter into the prepared cake pan and spread evenly.
  9. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  11. For the Glaze: In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract until smooth. Add more milk, a teaspoon at a time, if needed to reach desired drizzling consistency.
  12. Drizzle the glaze over the cooled cake.

Notes

  • For an extra burst of apple flavor, you can add a pinch of ground ginger to the dry ingredients.
  • If you don’t have fresh apples, you can use 1.5 cups of unsweetened applesauce, but the texture will be different.
  • The glaze can be adjusted to your sweetness preference.
  • Store leftover cake in an airtight container at room temperature for up to 3 days.
