- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 cup granulated sugar
- ½ cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- 2 cups finely diced peeled apples (about 2 medium apples)
- ½ cup chopped pecans or walnuts (optional)
- For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold in the diced apples and chopped nuts (if using).
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the bread is cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and ½ teaspoon vanilla extract until smooth. Add more milk, a teaspoon at a time, if needed to reach desired drizzling consistency.
- Once the bread is completely cool, drizzle the glaze over the top.
Notes
- For an extra burst of apple flavor, you can toss the diced apples with a tablespoon of flour before adding them to the batter. This helps prevent them from sinking to the bottom.
- You can substitute apple cider for milk in the batter for a more intense apple flavor.
- If you don’t have fresh apples, you can use unsweetened applesauce, but reduce the milk by ¼ cup.
- Other spices like ginger or cloves can be added to the cinnamon and nutmeg for a more complex flavor profile.
