Instructions
- In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
- In a separate medium bowl, whisk together the egg, milk, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the finely diced apple. The batter will be thick.
- Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C).
- Carefully drop rounded tablespoons of batter into the hot oil, working in batches to avoid overcrowding the pot.
- Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Using a slotted spoon, remove the fritter bites from the oil and transfer them to a wire rack set over a baking sheet to drain any excess oil.
- While still warm, generously dust the apple fritter bites with powdered sugar.
