Ingredients
Scale
- 4 tablespoons all-purpose flour
- 4 tablespoons granulated sugar, divided
- 1/4 teaspoon baking powder
- 1/8 teaspoon ground cinnamon, plus more for topping
- 3 tablespoons milk
- 1 tablespoon vegetable oil
- 1/4 teaspoon vanilla extract
- 1/4 cup diced apple (Granny Smith recommended)
- 1 tablespoon rolled oats
- 1 tablespoon brown sugar
- 1 tablespoon cold butter, cut into small pieces
Instructions
- In a large microwave-safe mug, whisk together the flour, 2 tablespoons of granulated sugar, baking powder, and cinnamon.
- Add the milk, oil, and vanilla extract. Stir until just combined.
- Gently fold in the diced apple.
- In a separate small bowl, combine the rolled oats, brown sugar, remaining 2 tablespoons granulated sugar, cinnamon, and cold butter. Use your fingers or a fork to work the butter into the mixture until it resembles coarse crumbs.
- Sprinkle the crumble topping over the apple mixture in the mug.
- Microwave on high for 1-2 minutes, or until the cake is cooked through and the topping is golden brown. Cooking times may vary depending on your microwave.
- Let cool slightly before enjoying. Serve warm.
Notes
- For a richer flavor, use brown sugar in the cake batter as well.
- If the topping starts to brown too quickly, you can loosely cover the mug with a paper towel.
- Serve with a scoop of vanilla ice cream or a drizzle of caramel sauce for extra indulgence.
