- 3 medium apples, such as Honeycrisp or Gala, peeled, cored, and diced
- 1 tablespoon lemon juice
- 1/2 cup (100g) granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 3/4 cups (210g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) milk
- For the Crumble Topping:
- 1/2 cup (60g) all-purpose flour
- 1/4 cup (50g) packed light brown sugar
- 1/4 cup (57g) unsalted butter, cold and cubed
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a bowl, toss the diced apples with lemon juice, 1 tablespoon of sugar, cinnamon, and nutmeg. Set aside.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream together the softened butter and remaining 3/4 cup sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the apple mixture.
- Prepare the Crumble Topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Pour the batter into the prepared loaf pan. Sprinkle the crumble topping evenly over the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve.
Notes
- For a richer flavor, use brown sugar in the cake batter instead of granulated sugar.
- You can add a glaze to the cooled cake by whisking together powdered sugar and milk until desired consistency.
- Store leftover cake in an airtight container at room temperature for up to 3 days.
