  • 3 medium apples, such as Honeycrisp or Gala, peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 3/4 cups (210g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk
  • For the Crumble Topping:
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (50g) packed light brown sugar
  • 1/4 cup (57g) unsalted butter, cold and cubed
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a bowl, toss the diced apples with lemon juice, 1 tablespoon of sugar, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. In a separate bowl, cream together the softened butter and remaining 3/4 cup sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Gently fold in the apple mixture.
  8. Prepare the Crumble Topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  9. Pour the batter into the prepared loaf pan. Sprinkle the crumble topping evenly over the top.
  10. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  12. Slice and serve.
