For the Crumble Topping:
- 1/2 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/4 cup cold unsalted butter, cut into cubes
- 1/4 teaspoon ground cinnamon
For the Apple Filling:
- 3 medium apples (such as Honeycrisp or Gala), peeled, cored, and diced
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
For the Coffee Cake:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup buttermilk
Instructions
- Make the Crumble Topping: In a medium bowl, whisk together the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside.
- Prepare the Apple Filling: In a medium bowl, combine the diced apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Toss to coat and set aside.
- Make the Coffee Cake: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together the granulated sugar and softened butter until light and fluffy. Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Pour half of the batter into the prepared pan. Sprinkle the apple filling evenly over the batter.
- Top with the remaining batter and then sprinkle the crumble topping evenly over the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan before slicing and serving.
Notes
- For a richer flavor, use brown butter in the crumble topping.
- You can add a glaze to the top of the cake, such as a simple powdered sugar and milk glaze.
- Store leftover cake in an airtight container at room temperature for up to 3 days.
