For the Crumble Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup cold unsalted butter, cut into cubes
  • 1/4 teaspoon ground cinnamon

For the Apple Filling:

  • 3 medium apples (such as Honeycrisp or Gala), peeled, cored, and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

For the Coffee Cake:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk

Instructions

  1. Make the Crumble Topping: In a medium bowl, whisk together the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside.
  2. Prepare the Apple Filling: In a medium bowl, combine the diced apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Toss to coat and set aside.
  3. Make the Coffee Cake: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  4. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. In a separate bowl, cream together the granulated sugar and softened butter until light and fluffy. Beat in the egg and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour half of the batter into the prepared pan. Sprinkle the apple filling evenly over the batter.
  8. Top with the remaining batter and then sprinkle the crumble topping evenly over the top.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan before slicing and serving.

Notes

  • For a richer flavor, use brown butter in the crumble topping.
  • You can add a glaze to the top of the cake, such as a simple powdered sugar and milk glaze.
