- 1 ½ cups graham cracker crumbs

- 1 teaspoon vanilla extract

- ½ teaspoon ground nutmeg
- ¼ cup all-purpose flour
- ¼ cup rolled oats
- 4 tablespoons unsalted butter, cold and cubed
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- Make the Crust: In a medium bowl, combine graham cracker crumbs and ¼ cup granulated sugar. Pour in melted butter and mix until well combined. Press the mixture evenly into the bottom of the prepared springform pan. Bake for 8-10 minutes, until lightly golden. Let cool.
- Make the Cheesecake Filling: In a large bowl, beat cream cheese and 1 cup granulated sugar until smooth and creamy. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until just combined. Pour the filling over the cooled crust.
- Prepare the Apple Crumble Topping: In a separate bowl, toss chopped apples with brown sugar, cinnamon, and nutmeg. In another bowl, combine flour and oats. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Assemble and Bake: Sprinkle the apple mixture evenly over the cheesecake filling. Then, sprinkle the crumble topping over the apples.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Cool and Chill: Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour. Remove from oven and let cool completely on a wire rack.
- Chill: Cover the cheesecake and refrigerate for at least 4 hours, or preferably overnight, before serving.
- Serve: Carefully remove the sides of the springform pan. Slice and serve.

- For an extra layer of flavor, you can add a pinch of salt to the crumble topping.
- If you prefer a smoother topping, you can pulse the apples in a food processor until finely chopped.
