  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cut into cubes
  • 1/2 teaspoon ground cinnamon

For the Vanilla Frosting:

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Vanilla Cake: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  3. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  4. Pour batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  5. Prepare the Apple Filling: In a saucepan, combine apples, sugar, lemon juice, cinnamon, and nutmeg. Cook over medium heat, stirring occasionally, until apples soften, about 10-15 minutes. Stir in butter until melted. Let cool.
  6. Prepare the Crumble Topping: In a bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Assemble the Cake: Place one cake layer on a serving plate. Spread with half of the apple filling. Top with the second cake layer. Spread the remaining apple filling over the top of the second cake layer. Sprinkle the crumble topping evenly over the apple filling.
  8. Bake the assembled cake for 15-20 minutes, or until the crumble is golden brown. Let cool completely.
  9. Prepare the Vanilla Frosting: In a large bowl, beat butter until smooth. Gradually add powdered sugar, alternating with milk, until frosting reaches desired consistency. Stir in vanilla extract.
  10. Frost the cooled cake. You can also frost between the layers, if desired.
