  • 1 ½ cups graham cracker crumbs

  • 6 tablespoons unsalted butter, melted

  • 2 medium apples, peeled, cored, and diced (about 2 cups)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • For the Cheesecake Filling:
  • 2 (8-ounce) packages cream cheese, softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan, or line with parchment paper.
  2. Make the Crust: In a medium bowl, combine graham cracker crumbs and sugar. Pour in melted butter and stir until well combined. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes. Remove from oven and let cool slightly.
  3. Prepare the Apple Filling: In a medium bowl, toss the diced apples with sugar, cinnamon, nutmeg, and lemon juice. Set aside.
  4. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually mix in the flour until just combined.
  5. Assemble the Bars: Spoon half of the cheesecake filling over the baked crust. Evenly distribute the apple filling over the cheesecake layer. Top with the remaining cheesecake filling, spreading it gently to cover the apples.
  6. Bake: Bake for 35-45 minutes, or until the edges are set and the center is almost set (it should still have a slight wobble).
  7. Cool: Let the bars cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours, or until firm.
  8. Serve: Cut into bars and serve chilled.

Notes

  • For a stronger apple flavor, you can sauté the apples with the spices for a few minutes before adding them to the bars.
  • If you don’t have graham crackers, digestive biscuits or shortbread cookies can be used for the crust.
